dinner ideas

I'm still in the stages of pregnancy where nothing sounds good to eat but I NEED to eat good meals. Any quick, semi-healthy dinner ideas girls? PS Our trip to the mall Saturday was a huge success for me. Found darling shorts at H&M (19.95) and a few nice shirts that can stretch once the baby starts to show.

Katy, well, for one, I didn't know your were pregnant! Congrats!!!

Here's my new favorite fast/healthy lunch or dinner -

prepare pasta -whatever kind I have on hand -cook & drain

saute whatever vegetables (chopped small) I have, frozen or not -usually it's leftovers from the night before (last time was broc/caulif/carrot mix w/ green beans and roasted potatoes..added some chopped tomatoes at the end)- in a smidge of olive oil and a spoonful of bacon for flavor (size of the spoon is up to you ;-)...I use the chopped kind from sams -it's real, just already cooked). Add 1+ eggs (whisked beforehand, as if I was making scrambled), saute with vegies until egg is cooked. Dump drained pasta in and stir fry for a sec. Salt & pepper if you like. Sometimes I add a smidge of thyme or whatever (really any herb you like). If it goes in pasta salad or an omlette, it works in this.

Happy Anniversary to you and your husband. Your sickness sounded terrible. We just had really bad flu here as well last week, I never get sick, so I was upset to be dealing with sickness while my sis was visiting. Sending you much love to feel better soon :)

I'm a huge fan of quesadillas - cheddar and black bean; chicken, cheese, and pepper and onion; feta, spinach and pepper, whatever. And I always use whole wheat tortillas.

I'm rarely a box mix person, but pregnancy calls for desperate measures. I'll often get the zatarain's dirty rice mix (if you like things slightly spicy) and add black beans as well as ground turkey. Then I'll cook up some jiffy corn bread mix.

I hope you get lots of recipe ideas!!

those are great. I actually had quesadillas on my meal plan this week but didn't think of adding black beans which I love. thanks girls

So in the same boat, Katie - I'm ten weeks and while I'll swing from nausea to raging appetite, even when I have a raging appetite I can hardly bring myself to prepare food! Then I'll make something that sounds good and make enough to have leftovers, and then the leftovers sound disgusting and Matt has to eat them all. I normally LOVE veggies, but they gross me out right now! So fruit-fruit-fruit is mostly what I'm consuming. And peanut butter. :/
